Low calorie, super easy, vegetarian pasta bake recipe that's slimming friendly!

If you haven't already worked it out by now, I love a super simple, easy. healthy recipe. Especially one that is pasta based!

This is so simple to make, as you can throw all the ingredients in the tray, roast the veggies, add you pasta and it's done!

I had some vine tomatoes which needed using up, and this recipe was absolutely perfect for it.

This is a vegetarian recipe too, but you could easily add meat if required. 

Swap the cheese for vegan cheese, and you can make this dish vegan friendly too.

Roasted Red Pepper & Tomato Pasta Bake | Low Calorie Slimming Friendly Recipe

You will need:

Bunch of vine tomatoes
2 red peppers, sliced
1 red onion, sliced
1 large garlic clove
pinch of salt & pepper
1 tbsp balsamic vinegar
1 tbsp light cream cheese
200g dried pasta

To top:
240g extra light cheddar 
1 tsp smoked paprika
Pinch dried parsley

Method:


Preheat oven to 180.

Add the tomatoes, peppers. onions and garlic to a baking tray. 

Roast in the oven for 40 minutes, or until the tomatoes are roasted.

Meanwhile, par boil your pasta.

Remove the tomato tray from the oven and take the tomatoes off the vine. Add a dash of water, and then transfer to a blender and blitz until smooth. 

Add a drizzle of balsamic and a tablespoon of cream cheese. Mix until the cheese melts into the sauce. 

Add some of the pasta water, then the pasta. Mix well. 

Top with cheese, smoked paprika and dried parsley. 

Add back in to the oven for 10 mins or until the cheese is melted and bubbling.
