Sometimes, the most delicious meals come about from throwing together what you have in the cupboard. That is very much how this dish was created.
I love Chicken Tikka flavours, but didn't fancy making a full blown curry.
This can be prepared in 1 pan, meaning less washing up after you have made it!
I used red and yellow peppers for this, but you can add as much or as little veggies as you like.
There is something super comforting about a tasty rice dish!

Chicken Tikka Rice Stir-fry Recipe

You will need:
For the chicken:
6 tbsp Tikka curry powder
Juice of 1 lime
500g diced skinless chicken breast
2 tbsp fat free natural yogurt
200g Rice long grain rice, cooked and cooled.
1 Red Pepper sliced
1 Yellow pepper, sliced
1 Red Onion diced
2 tsp smoked paprika
1 tsp minced garlic
1 Chicken Stock Cube, dissolved in 125 ml water.
3 Tbsp tomato puree

6 tbsp Tikka curry powder
Juice of 1 lime

Method:
Mix 3 tablespoons of tikka curry powder with the natural yogurt. Add in the diced chicken and mix until coated. Leave in the fridge for at least 20 minutes, or overnight if you can.
Spray a large frying pan with low calorie cooking spray, then fry the onion and pepper until softened. Add in the garlic, and the other 3 tablespoons of tikka curry powder and smoked paprika.
Add in the marinated chicken, and cook through.
Add in the stock, rice and tomato puree. Mix well and allow to simmer until the stock has soaked into the rice.
Spray a large frying pan with low calorie cooking spray, then fry the onion and pepper until softened. Add in the garlic, and the other 3 tablespoons of tikka curry powder and smoked paprika.
Add in the marinated chicken, and cook through.
Add in the stock, rice and tomato puree. Mix well and allow to simmer until the stock has soaked into the rice.
