Slimming World Recipe: Double Bacon Cheeseburger Meal

Some things are just too good to give up on a diet. Luckily on Slimming World there are ways of food optimising so that you can still have some of your favourite foods.   I really fancied a big burger meal and using both my healthy extras meant that I could re-create this classic without using any of my syns!  I had a double beef burger, bacon, cheese, chips, coleslaw and beans- all free on the extra easy plan!


You will need:- 
For the burgers (makes 4):-

450g extra lean (less than 5% fat) beef mince
1 small onion finely chopped
1 garlic clove, finely chopped
2 tsp fat free natural yoghurt
Salt & pepper to taste
1 60g wholemeal roll per person
4 rashers of bacon- all fat removed
Cheese slices, only 35g per person

Baked beans to serve

For the chips:-

900g medium sized potatoes ( I used Albert Rooster to give good colour)
Low calorie cooking spray
Crushed sea salt and malt vinegar

For the coleslaw:-

2 Carrots
1 Cabbage
1 Onion
1 Apple
3 tbsp of Quark

Method:- 

To make the burgers, gently fry off the chopped onion until cooked through, being careful that the onion doesn't go brown  or black! Once cooked, set aside to cool

Add the garlic, a pinch of salt & pepper, yoghurt and the cooled onions to the minced beef and mix together until blended.  Divide the mixture into 4 portions and using your hands, shape each portion into a burger.  Set aside until ready to cook, 

Preheat oven to 240°C/220°C Fan/Gas 9. Peel the potatoes using a potato peeler and remove any blemishes or 'eyes'.  Bring a large pan of salted water to the boil and add the chips.  Boil for 4 mins. 

Remove from the heat and drain the water.  Shake the chips in the pan to rough up the edges.   Spread out on a large baking tray and spray with fry light and sprinkle with salt & pepper.  Put in the oven to cook for around 35-40 mins, making sure you check regularly and mix the chips around so they are evenly cooked. 

While the chips are cooking you can make the coleslaw. Grate and shred all the ingredients and mix the quark through.  Add a little more quark if the mix looks too dry.

Place a frying pan sprayed with low calorie oil spray over a medium-high heat and cook the bacon and then the burgers for 5-7 minutes on each side until cooked through. 

Build your burger however you like, I had a burger, cheese then bacon.   Serve with your chips, coleslaw and some baked beans- enjoy!!
