Chicken & Bacon Club Sandwich Recipe

A club sandwich is one of those Instagrammable, 3 layer sandwiches. It's usually filled with cooked meats, mayo and salad. I wanted to make a version of this that is as healthy and low calorie as possible.

I used wholemeal bread, extra light cheese and extra light mayo. I also added a small amount of mustard for an extra kick. 

I cut the crusts off the bread to allow for the 3 slices of bread, and toasted the slices of bread before constructing the sandwich.

You will need:


(Makes 1 Sandwich)
3 slices 400g wholemeal bread
Cooked chicken
2 Cooked Bacon Medallions, all fat removed
1/2 teaspoon extra light mayo
1/2 teaspoon yellow mustard
40g extra light cheese, sliced
handful of mixed salad

Method:


Lightly toast the 3 slices of bread.

Lay the 3 slices out next to each other. 

Add the mayo to the one on the far left, and mustard to the one on the far right.

Add salad on top of the mustard, then add the cheese slices and bacon on top of that.

Place the middle slice on top to make the first layer of sandwich.

Layer the chicken, cheese and salad on top of that sandwich, then top it off with the mayo slice.
